Comforting blend of peas, ham, and turkey in a light, satisfying soup.

# What You Need:

→ Meats

01 - 3.5 oz smoked ham, diced
02 - 5.5 oz cooked turkey breast, diced

→ Vegetables

03 - 14 oz fresh or frozen spring peas
04 - 1 medium yellow onion, finely chopped
05 - 1 medium carrot, diced
06 - 1 celery stalk, diced
07 - 2 cloves garlic, minced

→ Liquids

08 - 4 cups low-sodium chicken or vegetable broth
09 - 2 tbsp olive oil

→ Seasonings

10 - 1/2 tsp salt (or to taste)
11 - 1/4 tsp freshly ground black pepper
12 - 1/4 tsp dried thyme
13 - 2 tbsp fresh parsley, chopped (plus extra for garnish)

→ Optional

14 - 2 tbsp crème fraîche or sour cream (for serving)
15 - Crusty bread (to serve)

# How To Make It:

01 - Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and celery, and sauté for 5 minutes until softened.
02 - Add the garlic and cook for 1 minute, stirring frequently to prevent burning.
03 - Stir in the diced ham and turkey, and cook for another 2 minutes to lightly brown the edges.
04 - Add the peas, broth, thyme, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for 15 minutes.
05 - Remove about one-third of the soup and blend it until smooth using an immersion or countertop blender. Return the purée to the pot and stir to combine, creating a creamy yet chunky texture.
06 - Taste and adjust seasoning if needed. Stir in the fresh parsley. Serve hot, garnished with a dollop of crème fraîche or sour cream and extra parsley if desired. Pair with crusty bread.

# Expert Tips:

01 -
  • The combination of smoky ham and sweet peas creates this incredible balance that feels sophisticated but takes almost no effort
  • You can have dinner ready in under an hour, and it always looks like you spent way more time on it than you actually did
02 -
  • I once skipped blending any portion of the soup and it felt too thin, like eating vegetable broth with stuff floating in it
  • Letting the soup sit for 5 minutes off the heat before serving allows the flavors to marry and settle
03 -
  • Reserve some ham pieces to garnish on top instead of stirring them all in, giving those pretty bites of smoky goodness in every spoonful
  • If using frozen peas, do not thaw them first, they cook better straight from frozen and hold their shape better
