01 - Bring a large saucepan of salted water to a boil. Add carrots and cook for 5 to 7 minutes until just tender. Drain thoroughly using a strainer.
02 - In a large skillet over medium heat, melt the unsalted butter. Stir in honey, brown sugar if using, salt, and black pepper until the glaze is smooth and well combined.
03 - Add the drained carrots to the skillet. Toss gently to coat. Cook for 5 to 7 minutes, stirring frequently, until the carrots are evenly glazed and lightly caramelized.
04 - Transfer glazed carrots to a serving dish. Garnish with chopped fresh parsley if desired and serve warm.
