04 - 1 cup mushrooms, sliced
05 - 2 cloves garlic, minced

→ Fresh Herbs

11 - 2 tablespoons chopped fresh parsley

→ Oil

12 - 3 tablespoons olive oil

# How To Make It:

01 - Heat 2 tablespoons olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8 to 10 minutes, stirring occasionally, until browned and beginning to soften.
02 - Add onion, red bell pepper, and mushrooms to the skillet. Sauté for 5 minutes, stirring occasionally, until vegetables become tender. Add the minced garlic and cook for an additional minute.
03 - Incorporate cooked bacon or sausage, if desired. Sprinkle smoked paprika, salt, and ground black pepper over the vegetable mixture. Stir to combine evenly.
04 - Create four small wells in the hash and drizzle the remaining tablespoon of olive oil into each. Crack one egg into each well. Cover the skillet with a lid and cook for 5 to 7 minutes, or until eggs reach preferred doneness.
05 - Remove skillet from heat. Garnish with chopped fresh parsley. Serve immediately while hot.

# Expert Tips:

01 -
  • The crispy edges of potatoes and softly runny eggs make each bite a delicious surprise.
  • It’s endlessly customizable, which means you can clear out your fridge and still turn out a breakfast worth lingering over.
02 -
  • If you stir the potatoes too much or too soon, you’ll get mush instead of crispy bits.
  • Covering the pan for the eggs steams them perfectly and also finishes the hash without drying anything out.
03 -
  • Letting the skillet heat up fully before adding oil and potatoes guarantees a crisp sear.
  • Adding the herbs at the very end keeps their flavor bright and lively.
