Blueberry Cheesecake Protein Bites (Printable)

# What You Need:

01 - 1 cup (225 g) light cream cheese, softened
02 - 1/2 cup (120 g) plain Greek yogurt
03 - 1/2 cup (45 g) vanilla whey protein powder

→ Fruit

04 - 3/4 cup (100 g) fresh blueberries
05 - 1 tsp lemon zest

→ Sweetener

06 - 2–3 tbsp honey or maple syrup (to taste)
07 - 1/2 tsp pure vanilla extract

→ Base/Coating

08 - 1/2 cup (50 g) almond flour
09 - 1/4 cup (20 g) unsweetened shredded coconut (optional, for rolling)

# How To Make It:

01 - Beat the cream cheese and Greek yogurt together in a medium mixing bowl until smooth and creamy.
02 - Add the protein powder, honey or maple syrup, vanilla extract, and lemon zest. Mix until well incorporated.
03 - Gently fold in the fresh blueberries, being careful not to crush them.
04 - Add almond flour and stir until the mixture begins to firm up. If too soft to handle, refrigerate for 10–15 minutes.
05 - Portion out the mixture using a small cookie scoop or spoon, then roll into 1-inch balls.
06 - If desired, roll each bite in shredded coconut for added texture and visual appeal.
07 - Arrange the bites on a parchment-lined tray and refrigerate for at least 1 hour until firm.
08 - Store in an airtight container in the refrigerator for up to 5 days.
